The wooden decks in the image i added are identical to the product on ebay, i added a link to their site below it (in case you've missed it) Also the Centenary edition's wooden decks are actually quite different.
However i dont understand why you think that it has no precuts for the chains on the forecastle deck? because i'm pretty sure i can see those precuts in both the ebay item and the link i added in my previous post ..so as far as i know your only worry is the benches.
Anyway, if you plan on cutting the wooden decks then it's best to use a hobby knife similair to this one:
Just follow the printed lines on the material with the help of a ruler, also if you accidentally make a hole too large you can always fill it up with excess material.
If you plan on removing the plastic benches from the decks i would recommend to first cut them off with flat cutting pliers and then scrape off the remains with your hobby knife, it doesn't matter if it looks messy afterwards as the wooden decks will cover it anyway, just be sure its nice and flat.
